Mango Coconut Chia Pudding

Ingredients

Serves 2

1 large mango, peeled and chopped

1 cup coconut milk

1 tablespoon organic maple syrup

1 teaspoon ground turmeric

5 tablespoon chia seeds

1/2 cup coconut yogurt

1/2 mango, cubed to serve

1/2 cup macadamia nuts, to serve

1/4 cup coconut flakes, to serve

Method

Mix mango, coconut milk, maple syrup, turmeric and chia seeds in a high-speed blender. If you are using frozen mango, let it defrost first.

Pour mixture into a large airtight container and refrigerate overnight.

Serve with coconut yogurt, fresh mango, macadamia nuts and coconut flakes.
