Thai Chicken Nourish Bowl

Ingredients

Serves 2

Spicy Peanut Sauce:

2 tablespoon smooth peanut butter

1 tablespoon fresh lime juice

3 teaspoon tamari

2 teaspoon raw honey

1 teaspoon tobasco

 

Thai Chicken Bowl:

1/2 cup brown rice, cooked

1 chicken breast, sliced into 1 inch pieces

1 tablespoon arrowroot powder

1 tablespoon fish sauce

1 chicken stock cube

1 tablespoon tabasco

1 tablespoon raw honey

1 tablespoon fresh lime juice

1 tablespoon extra-virgin olive oil

2 garlic cloves, minced

1 shallot, chopped

1 tablespoon ginger, chopped

1 cup spinach

1 cup purple cabbage,chopped

1/2 cucumber, spiralled

1 small carrot, julienne

Method

To make the spicy peanut sauce, whisk peanut butter, lime juice, tamari, honey and tabasco in a small bowl. Set aside.

In a large bowl, whisk chicken pieces, arrowroot and fish sauce. Allow the chicken to absorb the arrowroot.

In a seperate smaller bowl, whisk chicken stock with 1/4 cup of boiling water, tabasco, honey and lime juice. Set aside.

Heat olive oil in a large pan over medium heat. Add in chicken and cook for 3-5 minutes or until golden. Add in garlic, shallots and ginger, stirring frequently for 2 minutes until fragrant. Add in chicken stock mixture, stirring for another 2 minutes until slightly thickened.

Plate with the raw veggies and brown rice first. Pour in the Thai chicken mixture and season with salt and pepper. Serve with spicy peanut sauce.
