Lemon & Chicken Power Bowl

RECIPE
Ingredients:
2 serves
1 chicken breast
1/2 cup brown rice
1 cup baby spinach
1/2 cup purple cabbage, shredded
1 small Lebanese cucumber, peeled
6 cherry tomatoes, halved
1/2 avocado, sliced
1/4 cup spring onion, finely chopped
2 tablespoons unsalted peanuts
2 teaspoons black sesame seeds
Fresh mint to garnish
Lemon Marinade:
1 garlic clove, minced
1 lemon, juice and zest
2 teaspoons LAND Essentials Rise Ritual
2 tablespoons extra virgin olive oil
1 tablespoon wholegrain mustard
1 teaspoon baby capers
Pinch of sea salt
Method
Mix all lemon marinade ingredients in a small bowl. Pour marinade mixture over chicken breast in a ziplock bag and store in the refrigerator for a minimum of 30 minutes to marinate.
While the chicken is marinating, preheat the oven to 200ΒΊC and line a tray with baking paper. Bring a medium sized saucepan to the boil. Reduce heat to a simmer and cook brown rice for 30-35 minutes. Strain water and set the rice aside to cool.
Place chicken and marinade in the oven to cook for 20-25 minutes. Spoon the marinade over the chicken breast halfway through cooking to gain maximum flavour. Remove from the oven and allow to rest for 5 minutes.
Begin building your power bowl with a bed of spinach, brown rice, red cabbage, cucumber, cherry tomatoes and avocado. Place 1/2 of the chicken in each bowl. Garnish with spring onion, peanuts, sesame seeds and mint.
Tip: Keep the leftover juices from the oven baked marinade and pour over each bowl for maximum flavour!
