Kingfish Ceviche

RECIPE

Serves 4-6

Ingredients

400g kingfish sashimi

4 limes, juiced

6 cherry tomatoes, halved

1/2 red onion, finely sliced

1 small jalapeño, thinly sliced

1 avocado, cubed

1/4 cup fresh coriander

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Method

Finely slice sashimi into 0.5cm thick pieces. Place in a shallow bowl and pour in the lime juice. Leave to marinate for 5 minutes.

In a separate bowl, combine cherry tomatoes, red onion, jalapeño, avocado and salt & pepper.

Evenly layer the sashimi on a serving plate. Top with the remaining ingredients and garnish with coriander. Drizzle olive oil and season with salt and pepper before serving.

Eat fresh immediately. Do not leave the sashimi overnight.
