Gooey Peanut Butter Brownies

Ingredients

Serves 8

2 eggs or 2 tablespoon ground flaxseed with 5 tbsp water

1 cup oats, blended into flour

1/4 cup cacao powder

1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 cup unsweetened plant milk

3/4 cup natural smooth peanut butter

2 tablespoon raw honey or organic maple syrup

1 teaspoon vanilla extract

2/3 cups DF dark chocolate chips

Method


Preheat oven to 200ºC. If making vegan – combine ground flax with water and set aside for 5 minutes to thicken.

Add oat flour to the blender and pulse until a flour consistency is formed. Transfer oat flour to a large bowl combining cacao, baking powder and salt. Whisk until well combined.

Form a well in the centre of the bowl, adding plant milk, peanut butter, honey, vanilla extract and eggs or ‘flax egg’. Mix ingredients well until it forms a thick batter, then fold in the chocolate chips.

Pour batter into a greased baking tin (9x9”) spreading evenly with a spatula. Bake for 20 minutes, then allow 10-15 minutes to cool. Enjoy warm with a dollop of peanut butter or coconut yogurt.
