King Prawn Caprese Salad

RECIPE

Ingredients:

Serves 2-3

2 fresh mozzarella balls, thickly sliced

2 heirloom tomatoes, thickly sliced

6 king prawns, peeled, tails intact

8 cherry tomatoes, halved

Basil, to garnish

Broccoli microgreens, to garnish

Drizzle extra virgin olive oil

Drizzle red wine vinegar

Method

On a large plate, layer sliced mozzarella and heirloom tomatoes. Position one slice of mozzarella over two slices of tomato. Repeat this in a circular pattern around the plate until all gaps are filled.

Layer with king prawns and cherry tomatoes. Garnish with basil and microgreens. Drizzle a splash of olive oil and red wine vinegar before serving fresh.
