Heirloom Tomato & Chilli Burrata

RECIPE

Ingredients:

Serves 4

2 cups heirloom tomatos, halved

3 Birdseye chillies, finely sliced

2 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon capers

1 large garlic, minced

1/4 cup parsley, finely chopped

1-2 teaspoon chilli flakes

1 teaspoon sea salt

1/2 teaspoon black pepper

4 mini burrata balls

Italiana flatbread, to serve

Method

In a large bowl, add all ingredients except burrata balls. Combine well and sit to marinate for 15 minutes.

Pour mixture into your serving bowl. Add burrata balls and split each one using a sharp knife. Drizzle a little extra olive oil and garnish with more parsley (if desired). Toast Italian flat bread just before serving.
